Fermented foods have been part of the human diet since ancient times. Many cultures from Europe to Asia have long realized the health benefits of eating fermented foods. Though it's not yet quite as popular in western culture, I am happy to see various options begin to be available at local stores. It is also an extremely simple process to make your own! All you need is your favorite veggies, salt, water, and a jar! They make tasty snacks and also pair well with many cuisines.

Why are fermented foods so prized in these cultures? And why are we starting to see them here now? Surprisingly consuming fermented foods has a multitude of benefits to your health! Check them out below.

1. The fermentation processes creates enzymes in the foods which help aid in the digestive process.

2. Consuming fermented foods regularly provides your body with ample amounts of important B vitamins, like biotin and folic acid, that your body needs to stay healthy.

3. One of the by-products of fermentation is the creation of short-chain fatty acids. These help to support a healthy immune system.

4. Because of the abundant enzymes in fermented foods, eating them often helps you to absorb more of your foods nutrients by increasing their bioavailability.
